The journey begins with a symbolic interpretation of nasi lemak. Sambal is reimagined through a refined Japanese method, presented as ink, while the dish itself takes the form of a calligraphy brush. The act of dining becomes an act of expression—each movement deliberate, each flavor intentional.
From there, layers of texture and technique unfold. A compressed chicken “napoleon” introduces structure and contrast, paired with hotate and a delicate yogurt sauce. The sashimi course brings a moment of clarity, where hamachi is paired with tea elements, drawing from the quiet familiarity of Malaysian tea culture.
The progression continues with charcoal-grilled seafood, where kuruma ebi, tako, or amadai are paired with asam—its acidity carefully balanced to enhance rather than dominate. A distinctive course follows, translating the depth of Ipoh white coffee into a savory expression, pairing its roasted bitterness with both beef and dry-aged toro.

The sushi sequence reflects precision and progression, served on subtly truffle-infused rice. Each piece highlights clarity of flavor—from seasonal dry-aged fish to kawahagi, sayori, engawa, and anago—ending on a note that balances refinement with a touch of playfulness.
A deeply layered shark fin soup with shirako brings warmth and depth, bridging tradition and modern interpretation. The experience concludes with a refined expression of kuih talam, offering a gentle return to familiarity—simple, balanced, and quietly satisfying.
