From the purple sweet potato tart layered with fennel and ikura, to a mille-feuille inspired wellington, to a sturgeon broth infused with matsutake — every dish reflects craftsmanship in motion, weaving familiar comfort into refined artistry.



Episode 8
The journey begins with a reinterpretation of familiar ingredients, where structure and softness coexist. A purple sweet potato tart sets the tone with its delicate shell and a rich foundation of white wine, butter, and sweet onion sauce, lifted by the freshness of fennel and the vibrant salinity of ikura. Alongside it, a playful transformation of Mapo tofu emerges as Mapo potato, where comforting flavors are refined through careful technique and balance.

At the heart of the episode lies a reinterpretation of the classic Wellington. Instead of traditional pastry, the dish takes form through a delicate mille-feuille structure, layered to envelop slow-braised meats with shiitake and onion. Each menu expression presents its own interpretation—from sturgeon to lamb, and finally Wagyu—revealing how subtle shifts in ingredient and texture can reshape the narrative of a dish.
