In Episode 10, Fusion explores the harmony that emerges when opposing elements are brought together with intention. Richness meets freshness, delicacy meets depth, and familiar flavors are reinterpreted through refined technique. Each course is designed to reveal how contrast can create balance rather than division.

The journey begins with seared shirako paired with yuzu kosho and ponzu, alongside a black date filled with cream cheese, creating a balance of creaminess, acidity, and sweetness from the very first bite.
As the menu unfolds, guests will experience seared maguro paired with a refreshing watermelon and sesame sauce, charcoal-grilled seafood complemented by bright citrus notes, and a progression of sushi featuring seasonal dry-aged fish, engawa, hirame, scampi, and grilled hotate. Throughout the experience, familiar ingredients are presented through refined Japanese techniques, allowing each flavor to express itself with clarity and purpose.
Across the menu, ingredients evolve through different expressions—from tako and kimedai to dry-aged wagyu—revealing how a single composition can take on entirely different characters depending on the ingredient at its center. Even familiar flavors are reimagined through a new lens, where inspiration is drawn from both Japanese craftsmanship and local culinary memories.
As the experience continues, precision gives way to comfort, culminating in a clear broth inspired by Bak Kut Teh and a selection of desserts that balance refinement with nostalgia.

The sushi progression highlights the natural character of each ingredient, while the Exclusive Menu for Episode 10 presents the episode's most indulgent expression through dry-aged wagyu, bone marrow, and mustard. Together, these dishes form a menu that celebrates the beauty of contrast—not as opposing forces, but as elements that complete one another.
